    Royal Meadery was started by Gregory Wilhelm to continue his passion in beekeeping and brewing. Gregory has been keeping bees for over six years in Upstate NY. Each year his beekeeping operation grows and is able to produce more honey. While we use more honey than we can currently produce, we look to grow our apiary each year.

     

    Royal Meadery Mission

    Royal Meadery focuses on producing mead using NYS ingredients when possible. By utilizing local honey, fruits and hops we are able to produce artisan mead that is unlike any other commercially produce mead. By using NYS ingredients we are able to support local agriculture. By being located in the scenic Schoharie Valley we have access to a wide range of farms to provide ingredients.

     

    Honey

    Honey is the most important ingredient when producing mead. Selecting the finest honey for our products is very important. In order to ensure we are able to utilize the best honey available, we will continue to grow our beekeeping operation. When sourcing honey we look for raw honey that has not been heated or processed, by doing this we are able to maximize the flavor contributions from the honey. Royal Meadery’s hives are all natural and do not use any chemicals to maintain the bees. When selecting honey from other producers we buy from other beekeepers who share the same values as us.
